A recipe from our Food Ambassador Judith. This recipe is a traditional Equadorian breakfast with green plantains, eggs and cheese. Serve with coffee and add avocado or an extra fried egg if you like!

Serves 4 people and takes 35 minutes.

Ingredients

  • 3 large green plantains

  • 1 tablespoon butter

  • 1 tablespoon oil

  • ½ onion, finely chopped

  • 4 eggs, lightly beaten

  • 150 g queso fresco, crumbled

  • ¼ cup milk (optional)

  • Salt and black pepper, to taste

  • Fresh coriander (optional)

Method

  1. Peel the plantains and cut into chunks.

  2. Cover with water in a saucepan. Add a little salt. Boil for 20–25 minutes until soft.

  3. Drain and roughly mash with a fork. Leave some small pieces for texture.

  4. Heat the butter and oil in a large frying pan. Cook the onion until soft.

  5. Add the beaten eggs. Stir gently until fully cooked.

  6. Add the plantains and cheese. Mix over low heat. Add a little milk if too dry.

  7. Season with salt and pepper. Add coriander if you like.
