Secret vegetable Cake (vegan)

Ingredients

  • 250g Margarine

  • 300g Soft brown sugar

  • Vanilla extract

  • 210ml Oat milk

  • 420g Plain flour

  • 7.5g Baking Powder

  • 7.5g Sodium Bicarbonate

  • 75g Sunflower Seeds (linseeds, sesame seeds or flaxseeds can be used)

  • 30g Mixed spice

  • 1 Orange zest and Juice

  • 270g Grated vegetable (carrot, courgette, aubergine etc)


This recipe was made during the launch of our new delivery float, Huey the Hub float and was a hit with everyone. The vegetable cake made on the day was made with courgettes which currently in season.

Although it’s called Vegetable cake, believe when we tell you that you cannot taste any of the vegetables in it, just the flavours of orange and spices, making this also appropriate for Christmas.

This is a way to sneak a bit of your 5 a day in yours or your child’s diet without even knowing it!


Method:

  1. Whisk together the margarine, vanilla extract and sugar

  2. Slowly add the oat milk while whisking. Once combined, set aside.

  3. Add the plain flour, sodium bicarbonate, baking powder and mixed spice together in a separate bowl and whisk together until combined.

  4. Add the oat milk mixture to the made in step 2 to the dry ingredients. Then add the orange zest and juice.

  5. Make sure you drain away the moisture from the grated vegetable by squeezing it out and add to the cake batter.

  6. Blend the sunflower seeds into a powder and add to the cake batter.

  7. Mix everything together and pour into a baking tray lined with baking paper.

  8. Bake at 170 degrees Celsius for 45-60 minutes.
