Sweetcorn and Courgette Fritters with Tomato Salsa

Ingredients

Ingredients for fritters

  • 145 grams Courgettes/Carrots

  • 2 tablespoons (17 grams) of gram (chickpea) flour (or rice Flour)

  • Half a tablespoon ground flaxseeds

  • Half a tablespoon Nutritional Yeast (optional)

  • Half a teaspoon of baking powder

  • 20 ml water as needed

  • Half tablespoon of extra virgin olive oil

  • 40g canned sweetcorn

Ingredients for tomato salsa

  • 150 grams of fresh tomatoes

  • Juice of half to one lime

  • Large handful of fresh soft herbs, such as mint, coriander, parsley or basil (mint or coriander are our preference!)

  • Salt and pepper to taste

  • 1 red or green chilli (optional)

  • 1 garlic clove, crushed (optional)


Mini chefs leader, Rena (@eatlovepassion) got families making these delicious sweetcorn fritters at our latest mini chefs session. This dish turned out to be a hit for both adults and children and parents said they felt encouraged to make the dish again with their children at home. These tasty fritters are perfect for summer, when courgettes and tomatoes are in season.


Method 

  1. Rinse the courgettes, trim off the ends, and grate them. Leave them to drain in a colander while you prepare the other ingredients.

  2. In a bowl, add chickpea flour, flaxseeds, nutritional yeast, water, and olive oil. Season with salt and pepper to taste along with fresh herbs and spices and mix all until combined. If the mix is too wet add a pinch more chickpea flour, or if too wet, water.

  3. Add to the bowl, drained sweetcorn and grated courgettes. Mix well until the veggies are coated with the vegan egg mixture. Form into fritters or patties. The thinner the crispier they will be!

  4. Put in pre-heated oven at 180 °C for 20-25 minutes on a lined baking tray with parchment paper. Alternatively, you may shallow fry with a small amount of olive oil in a pan or an air fryer for a healthier option.

  5. Once ready, transfer the veggie patties onto a rack and enjoy them warm or cold a tasty picnic and on the go snack!

  6. For the tomato and herb salsa you can be creative, simply chop up some sweet and juicy fresh tomatoes add any herbs you love along with a squeeze of lime juice and a little spoon of honey or maple syrup and some seasonings to taste. You can also add a little garlic or fresh chilli if you want to spice it up a little!
