Pear cake

Round pear cake

Ingredients

  • 3 x pears

  • 150g plain flour

  • 150g brown sugar

  • 100g margarine

  • 3 eggs

  • 16g baking powder

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • a pinch of salt

Method

  1. In a large bowl mix flour, baking powder, cinnamon and salt.

  2. Peel and core pears.

  3. Cut the pears into 4 pieces. Slice them horizontally into small pieces*. Pop them in a bowl.

  4. Melt the margarine in microwave or double boiler and pour onto pear slices.

  5. In another bowl beat sugar and eggs with a hand-mixer for a couple of minutes until smooth and creamy.

  6. Pour flour mixture onto pears and butter, stir.

  7. Add egg and sugar mixture and stir gently to combine.

  8. Pour the batter into a cake pan of 22cm diameter or an equivalent tin.

  9. Bake at 180°C for 45 minutes.

  10. Check readiness. Poke the cake in the middle with a stick. It should come out dry if cake is cooked. Let it cool down and enjoy.

* If the pears are very juicy you can add 20/30g of flour to absorb the moisture
