Pear cake

Ingredients
3 x pears
150g plain flour
150g brown sugar
100g margarine
3 eggs
16g baking powder
1 tsp vanilla extract
1 tsp cinnamon
a pinch of salt
Method
In a large bowl mix flour, baking powder, cinnamon and salt.
Peel and core pears.
Cut the pears into 4 pieces. Slice them horizontally into small pieces*. Pop them in a bowl.
Melt the margarine in microwave or double boiler and pour onto pear slices.
In another bowl beat sugar and eggs with a hand-mixer for a couple of minutes until smooth and creamy.
Pour flour mixture onto pears and butter, stir.
Add egg and sugar mixture and stir gently to combine.
Pour the batter into a cake pan of 22cm diameter or an equivalent tin.
Bake at 180°C for 45 minutes.
Check readiness. Poke the cake in the middle with a stick. It should come out dry if cake is cooked. Let it cool down and enjoy.
* If the pears are very juicy you can add 20/30g of flour to absorb the moisture
