Okra and Ackee Wraps

Ingredients

  • 2 tbsp sunflower oil

  • 1 tin of ackee

  • 2 peppers (1 red and 1 green), chopped

  • 1 onion, chopped

  • Wholemeal wraps

  • 200g of okra, chopped


The two friends brought together two key national ingredients – okra (from Ghana) and ackee (from Jamaica) to create a delicious recipe that combines the two. Okra, sometimes known as ladies’ fingers, is the main food from the Ewe tribe in Ghana. It can be slimy but is also delicious and is considered to be good for fertility and indigestion. Ackee grows on trees, and the ackee must open up before you can pick it. Diane explained that many say that the best way to get the ackee to open it is to stand under the tree and laugh! If cooking ackee from fresh, the seeds need to be removed first then boiled, however most people tend to buy the tinned version, which is easier and also saves on air miles!

Diane said: “I don’t think we should be afraid of cooking things a certain way. Food is what you make it. Play with food. Make it your own. Remix it, take stuff out, put stuff in. But enjoy it though.” These delicious okra and ackee wraps are really easy to make and taste delicious. Why not give them a try today?


Method

  1. Preheat your pan.

  2. Add 2 tablespoons sunflower oil.

  3. Add chopped onions and bell peppers and stir.

  4. Add the drained tin of ackee, stir and add a pinch of salt and black pepper. Next add your chopped okra, stir, cover with a lid and leave to simmer for 10-15 minutes on a low heat.

  5. Serve with pitta wraps and enjoy.
