Moroccan Loubia (White Beans)

Ingredients

  • 1 teaspoon cumin seeds

  • 1 teaspoon paprika

  • 1/2 teaspoon chilli powder

  • 2 cans white (cannellini) beans, rinsed and drained

  • 25g fresh coriander

  • 2 tablespoons oil

  • 1 teaspoon garlic

  • 2 medium tomatoes

  • Salt and ground black pepper to taste


This recipe was made by Food Ambassador Karima at one of her Food Ambassador sessions in February 2024.

Loubia is typically enjoyed with a sprinkle of fresh parsley and bread. It’s the perfect dish to cosy up to during those winter months.


Method:

1. Heat the oil in a pan. Once heated, put in the garlic, tomatoes and coriander in on a slow heat.

2. Add 2 1/2 cups of water to the pan, adding the cumin seeds, paprika, salt and chilli powder.

3. Cook for 10 minutes and add the white beans to the pan.

4. Increase the heat for another 10 mins.

5. Turn off the heat and enjoy!
