Lentil loaf recipe

Our Food Ambassador, Lorna, brought this recipe to our Community Cafe. It’s a delicious lentil dish which is a great savoury gluten-free alternative to bread! Serves 4 people.

Ingredients

  • 2 eggs

  • 200g red lentils (soak for 2 hours)

  • 1 tablespoon yoghurt

  • 2 spring onions (chopped)

  • 100g feta cheese (crumbled)

  • 1 tablespoon fresh dill (finely chopped)

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon baking powder

  • 50g fresh spinach (chopped)

  • 1 tablespoon extra virgin olive oil

  • Sesame seeds for topping

Method

  1. Preheat the oven to 180C

  2. Add soaked lentils, eggs and yoghurt to a blender or food processor. Blend until smooth

  3. Transfer the mixture into a large bowl

  4. Add in the rest of the ingredients and mix

  5. Line the loaf pan with baking paper and pour in the batter

  6. Smooth the top with a spatula and sprinkle sesame seeds on the top

  7. Bake for 55-60 minutes, or until the bread has risen and a knife comes out clean
