Lentil loaf recipe

Our Food Ambassador, Lorna, brought this recipe to our Community Cafe. It’s a delicious lentil dish which is a great savoury gluten-free alternative to bread! Serves 4 people.
Ingredients
2 eggs
200g red lentils (soak for 2 hours)
1 tablespoon yoghurt
2 spring onions (chopped)
100g feta cheese (crumbled)
1 tablespoon fresh dill (finely chopped)
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon baking powder
50g fresh spinach (chopped)
1 tablespoon extra virgin olive oil
Sesame seeds for topping
Method
Preheat the oven to 180C
Add soaked lentils, eggs and yoghurt to a blender or food processor. Blend until smooth
Transfer the mixture into a large bowl
Add in the rest of the ingredients and mix
Line the loaf pan with baking paper and pour in the batter
Smooth the top with a spatula and sprinkle sesame seeds on the top
Bake for 55-60 minutes, or until the bread has risen and a knife comes out clean
