Ingredients
Half a lettuce
1 red pepper
1 Cucumber
2 Carrot
1 bunch of spring onions
3 Eggs
1 tbsp cooking oil
1 packet of rice papers (can buy from Chinese supermarkets)
Dipping Sauce:
4 tbsp Soya sauce
6 tbsp of water
1 tsp of honey
2 gloves of garlic minced
Juice of 1 lime
Fresh chilli (optional)
For Garnish:
4 limes/lemon
Spring onions
Coriander
Fresh chilli
One of our members, Linh showed parents how to make these Vietnamese summer rolls (also known as salad) alongside tomato noodle soup at one of our cultural cookalongs at St Stephen’s children’s centre. They are called summer rolls because they are so fresh, and are enjoyed all year round, not just in the summer. In Vietnam the actual translation is summer rolls. Method
Wash carefully all vegetables. Cut the lettuce, cucumber, red pepper and spring onions into thin medium length strings. Grate the carrots on the fatter side of a grater. Set aside.
Crack the eggs into a bowl, add a pinch of salt. On a hot pan add a tablespoon of oil and make some thin omelettes. When the omelettes cool down, cut them into small strips the same as your vegetables and set aside.
In a small bowl or a cup mix in soya sauce, water, lime juice, honey, minced garlic and chilli. Mix everything well together and adjust according to your taste.
Pour some hot boiling water in a deep plate or large bowl. Wet the rice paper with water, place flat on a plate or board for rolling. Place a little bit of all of the vegetables and a slice of omelette in the middle of rice paper towards down. Close both sides and start rolling from the bottom upwards. Repeat until you finish all ingredients. DO NOT place salad rolls on top of each other as they can stick and break the rolls.
