Coconut Roti

Ingredients

  • 300g frozen shredded coconut, defrosted

  • 2 onions, chopped

  • 1 carrot, grated

  • 100 grams cabbage, finely sliced

  • 200 grams of plain flour

  • Half a teaspoon of salt

  • 5 tablespoons of warm water


Namali, from Sri Lanka showed us how to make these coconut roti at our International Women’s day event. She explained that in Sri Lanka fresh coconut is used in many dishes.  Since its not easy to find in the UK, here we have used frozen shredded coconut. Delicious served with pumpkin or jackfruit curry.


Method 

1. Mix everything in a bowl together to make a pastry like dough. Briefly knead the mixture with your hands.

2. Divide the dough 6 balls. Dust the surface with a little flour. Take 1 ball and roll it, and turn it over each time you roll it, until you have a circle about 1 cm thick.

3. Heat a medium frying pan with a little oil. Cook for 2 to 3 minutes on each side-  repeating a couple of times until they are brown.
