Christmas pudding energy balls recipe

A nut-free and vegan recipe

This recipe is really simple and the ingredients can be adjusted depending on what you have in your cupboards. Feel free to add extra dried fruits or nuts if you like. They make a great nutritious treat for the festive season or all year round without decoration!

Ingredients

½ cup oats (any type works!)

½ cup desiccated coconut

1 tbsp cocoa powder

1.5 cups pitted dates

2 tbsp sunflower seeds

1 tsp vanilla extract

3 tbsp chopped raisins

2 tbsp chopped dried cranberries

1 packet of vegan white chocolate buttons

Holly sprinkles or goji berries and mint leaves

Method

  1. Place the oatmeal and coconut in a blender and pulse until finely ground.

  2. Add the cocoa powder, dates, vanilla extract and sunflower seeds to the blender and pulse until the mixture becomes a dough. You may need to finish this with your hands!

  3. Remove from the blender and add the raisins and cranberries, mixing into the dough with your hands.

  4. Roll the mixture into 1 inch balls and place on a plate or tray.

  5. Boil a small amount of water in a saucepan and melt your chocolate buttons by placing them in a heatproof bowl on top of the saucepan. The steam will cause the buttons to melt - just keep stirring them.

  6. Drizzle the melted chocolate on top of each energy ball and decorate with your sprinkles or goji berries and mint to look like sprigs of holly.

Enjoy immediately or store them in the fridge for up to a week. They can also be frozen for up to 3 months.
