Ingredients

  • 4 large onions, diced

  • Olive oil

  • 8 garlic cloves, minced

  • 8 carrots, peeled and diced

  • 2 tbsp cumin

  • 2 tbsp paprika

  • 2 tbsp ginger powder

  • 2 tbsp Black pepper

  • 1 tbsp dried mint

  • 1 tbsp kurkuma powder (can be left out if not available)

  • 3 kilos red lentils

  • Salt, to taste

  • chilli flakes, a pinch

  • Lemon juice


The Mediterranean lentils soup is packed with fresh ingredients and flavors, making it a warm, tasty, and healthy dinner starter that the whole family will enjoy, even the kids. Plus it takes less than 1 hour to prepare and cook!

This recipe was originally made for a large group at the graduation of class of June 2023 Food Ambassadors, however it can be modified for a small group.


Method:

  1. Sauté the onion and garlic in olive oil , until it has gone see through

  2. Add the carrots, kurkuma powder, paprika, ginger powder, turmeric, cumin, and salt and black pepper and cook for an additional minute. Then add the dry mint.

  3. Rinse the red lentils, then add the lentils to the pot with the garlic, onion and carrots. Boil in vegetable broth and water until tender.

  4. Puree the soup to your liking using an immersion blender. Stir in lemon juice and chilli flakes.

  5. Serve warm with salt and pepper to taste.
