Cabbage Soup

Ingredients

  • 4 tablespoons of preferred cooking oil

  • 1 small cabbage (red or white), chopped

  • 1 large red pepper

  • 1 chopped tomato

  • 1 spoon minced ginger

  • 1 small onion

  • 3 large carrots

  • 3 large zucchinis

  • 2 litres of water

  • 2 fresh garlic cloves

  • 1 teaspoon paprika

  • Chilli powder and chilli flakes to preferred taste

  • Cumin

  • Coriander


This delicious recipe was cooked my Aisha during one of our Food Ambassador sessions. It was originally made for a large group of people it but can be modified to be made for smaller servings.


Method:

  1. Heat the cooking oil in a large pan over medium heat.

  2. Add the chopped cabbage and stir fry for 5 minutes.

  3. Blend the tomato, onion, pepper, garlic and ginger until smooth. Add this to the pan and cook for 6 minutes.

  4. Add the chopped carrots and zucchini to the pan.

  5. Add the water and seasonings (Paprika powder, chilli powder, chilli flakes, cumin and coriander)

  6. Leave until fully cooked. Enjoy with toasted bread or garlic bread!
