Oat and raisin cake

Ingredients

  • 4 eggs

  • 1/2 cup sugar

  • 1 tablespoon vanilla

  • 1/4 teaspoon salt

  • 1/2 cup oil

  • 1/2 cup milk

  • 2 cups oat bran

  • 1/2 cup plain flour

  • 1 teaspoon baking powder

  • 1 tablespoon raisins


This recipe was made during one of our Food Ambassador sessions in November 2023 by Semira.

In the photo, you won’t see any raisins as they were forgotten but sometimes that happens! It goes to show that if you’re not a fan of raisins, they can be left out, however they do taste amazing when put in and provide you with a little bit of fibre in your diet.


Method:

1. Crack the 4 eggs in a bowl, add the sugar, vanilla and salt and mix them well.

2. Add the milk and oil to the mixture then mix again

3. Add in the ground oats, flour and baking powder and mix until it comes together to form a cake batter

4. If using raisins, add them to the cake batter and stir them through until they are evenly distributed

5. Pour the mixture into a baking tray and bake at 180 degree for 20 minutes
