Easy fudgy vegan brownies

Ingredients

  • 210g dark chocolate (most dark chocolate is vegan, but double-check!)

  • 130g Plain flour

  • 200g caster sugar

  • 30g Cocoa Powder

  • 1 tsp baking powder

  • 1 tsp salt

  • 90ml Vegetable oil

  • 230g Oat milk

  • 150g vegan chocolate chips


This recipe was made at the Food Ambassador celebration in December 2023 by Semira.

Yes it says vegan but you wouldn’t even know it! When this was served for dessert, it was a hit with everyone asking for the recipe. It has the perfect amount of fudginess and crisp on the top.


Method:

1. Break the dark chocolate into small pieces, put into a microwavable bowl. Melt the chocolate by microwaving in bursts of 30 seconds until melted. Stir until smooth.

2. In another bowl, add the plain flour, caster sugar, cocao powder, baking powder and salt. Mix all of these ingredients until they are combined. These are the dry ingredients.

3. Add the vegetable oil and oat milk to the dry ingredients and whisk until it is smooth.

4. Pour in the chocolate you melted in the microwave and whisk until it is mixed together.

5. Fold in the chocolate chips into the batter

6. Pour into a baking tray and bake at 180C/160C (fan) for 26 minutes. Allow to cool fully in the tray.
