Ria’s Carrot Subji

Ingredients

  • 8 carrots, slices at an angle

  • 1 large red onion, finely chopped

  • 1 bag of spinach, washed

  • 2 green chillies, finely chopped

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon turmeric powder

  • 1 tablespoon masala powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chilli powder

  • Salt, to taste

  • 2 tablespoons oil

  • Fresh coriander for garnish


This recipe was made by Food Ambassador Ria at one of her Food Ambassador sessions in February 2024.

Inspired by her partner’s Tamil culture, carrot subji is a staple at home. It provides lots of flavour while using veg that is readily available in the UK. This dish is best served as a side dish to go alongside your favourite dhal.


Method:

1. Heat oil in a pan and add cumin seeds, mustard seeds, chillies salt and coriander powder Allow mustard seeds to splutter.

2. Add finely chopped onions and sauté until they change colour.

3. Add carrots, masala powder, red chili powder and turmeric. Stir in the spices so they marinate the carrots.

4. After 10 minutes add spinach covering the carrots completely.

5. Cover the pan and let the carrots cook until they are tender, approximately 5 -10 minutes.

6. Garnish with fresh coriander leave and serve hot with chapati or rice.
