Blackberry and Apple Crumble

Ingredients

Fruit Filling:

  • 3 large apples

  • 200g blackberries

  • 1 tbsp maple syrup

  • 1/2 tsp cinnamon

Topping:

  • 90g oats

  • 100g plain flour

  • 50ml maple syrup

  • 1 1/2 tbsp coconut oil

  • 1 tsp cinnamon


This recipe was made during a Brockwell Mini-chefs sessions at the Brockwell Community Greenhouses. Blackberries are in season between July and October, so making this in August was the perfect time to enjoy them!


Method:

  1. Peel the apples and remove the core. Cut into chunks. Place in a pan with washed blackberries, maple syrup, cinnamon and a splash of water. Put the lid on and simmer over medium heat for 10 minutes.

  2. Heat the oven to 180°C. Put oats and flour into a mixing bowl. Add the maple syrup, cinnamon and coconut oil into a separate heatproof bowl and in the microwave for 20 seconds. Pour into the mixing bowl (with the flour and oats) and stir all the ingredients together.

  3. Once the fruit is soft, transfer to an ovenproof dish or bowl and cover with the topping mixture. Bake in the oven for 25-30 minutes. Allow to cool and serve or freeze and enjoy another time!
