  • Cost: £1.15

Greek salad is a delicious and fresh dish made with crunchy cucumbers, flavoursome tomatoes, red onion, feta cheese (or vegan alternative), olives, herbs and olive oil. Have you seen the Veg Power ads on your TV or in your supermarket? We have been cooking along with the national campaign to encourage children to eat more vegetables. We hope that this delicious Greek salad recipe will encourage you and your family to give them a try.

  • 3 large tomatoes, chopped
  • 1 cucumber, chopped (you can remove the seeds if preferred)
  • 1/2 red onion, peeled and thinly sliced
  • 50g black olives, preferably kalamata, pitted
  • 1 tbsp dried or fresh oregano
  • 100g feta cheese or vegan alternative
  • olive oil

  1. Mix the chopped cucumber, tomatoes, red onion and black olives together in a large salad bowl.
  2. Sprinkle over the feta cheese and oregano.
  3. Drizzle with olive oil and serve immediately with dips and pitta bread.
