Veganuary Brunch

Join Zoe, food co-ordinator and manager at our ‘Healthy Living Kitchen’ to cook delicious vegan versions of some of your favourite brunch dishes. We will make:
- Baked crispy hash browns
- Smoky beans
- Vegan scramble
This will be a fun, friendly and informative session where we will get to cook together and share lots of tips for creating tasty vegan dishes.

Here are the ingredients you will need for the session – the seasonings are optional and feel free to make your own substitutions
Hash browns
- 2 medium potatoes (about 250g in total)
- Half a teaspoon of smoked paprika*
- a handful of fresh herbs, such as rosemary or sage (optional)
- Half a teaspoon of garlic powder (or can sub with fresh garlic or leave out)*
- Half a teaspoon of cayenne pepper*
- Quarter an onion (diced)
- Tablespoon of oil (olive or sunflower)*
Smoky beans
- 150 grams of chopped tomatoes (tinned are best)
- 1 tin of haricot or cannelini beans
- 1 garlic clove*
- Half an onion (diced)
- Half a teaspoon of smoked paprika*
- 1 tablespoon of oil (olive or sunflower)
Vegan scramble:
- 75 grams of chickpea (gram) flour
- Quarter teaspoon of turmeric*
- 100 millilitres of water
- Teaspoon of cider vinegar (optional)*
- Pinch of garlic powder (optional)*
- Half an onion
- 1 garlic clove*
- 50g of greens, such as spinach, kale or spring greens
- half a teaspoon of cumin seeds*
- 1 teaspoon of garam masala*
* Ingredients which are not included in recipe packs
You will also need the following equipment:
- 1 small/medium saucepan
- 1 baking tray or cupcake or muffin tray
- Mixing spoon
- Grater
- Sieve
- Mixing bowl
- A medium to large non-stick frying pan
- Spatula
- Teaspoon
- Tablespoon
