Sauerkraut cook-along

Join Zoe, HLP kitchen manager to learn how to make sauekraut. This is a great dish to help you to learn more about the process of fermentation. It is really easy to make, you need very few ingredients, is a good way of preserving vegetables and is great for feeding the bacteria in your gut.
First 10 people (need to be local to Brixton) to sign up will get a free recipe pack. Please email info@healthylivingplatform.org if you would like a pack (ready for collection at Liz Atkinson centre or Southwyck on Friday 19th March).

You will need the following ingredients
1kg of white or red cabbage – around 1 large cabbage, or 1 small cabbage and 2 carrots and/or beetroot – or any combination (total weight of all veg 1kg)
1 tablespoon of good quality sea salt
1 tablespoon of caraway seeds (optional)
You will need the following equipment
A large mixing bowl
A chopping board and knife or food processor
1 litre glass jar kilner style jar
1 small weight, such as a clean stone, kitchen weight, or empty spice jar
