Nigerian fried rice and dodo (fried plantain) cook-along

FREE COOK ALONG WITH RECIPE PACK 

Join Mellissa- Healthy Living Platform member and local mother of 3- to make these delicious Nigerian dishes for a FREE interactive cook-along. This is a great meal to make when you are in a rush and have many people to feed. Not only this, Nigerian fried rice is a celebratory rice dish that will be found at most parties across Nigeria.

You will need the following ingredients for the session:

 

For the Nigerian fried rice:

2 cups of long or short grain rice (white or brown)

2 onions

1 clove of garlic

1 or 2 scotch bonnet peppers (depending on how spicy you like)

Mixed veg (such as red, yellow and green peppers)

Frozen or tinned veg such as handful of sweetcorn and peas

50g of mushrooms

Fresh or dried thyme

1 or 2 tablespoons of curry powder

1 or 2 tablespoons of all purpose seasoning

1 vegetable stock cube or 1 tablespoon of vegetable stock

1 teaspoon of fresh ginger (optional)

1 tablespoon of coconut/sunflower/rapeseed oil

 

For the plantain:

1 yellow plantain

1 tablespoon of coconut or rapeseed oil

 

You will need the following equipment:

1 chopping board and knife

Non-stick frying pan

Wooden spoon

Sieve

1 large saucepan
