Joloff rice cook-along

Join Diane, Food Ambassador and Parent Champion to cook her celebrated and well loved Joloff rice recipe with kelewele (spicy fried plantain). Joloff rice is popular rice dish enjoyed in most West-African countries. We will also be talking about the history of this dish and the famous ‘Joloff wars’!

These are the ingredients you will need for the session

(Serves 2 but double the quantities if you want to feed more)

For the joloff rice:

250g of basmati rice

200g of cherry tomatoes or tinned chopped tomatoes

1 small onion

1 to 2 garlic cloves

1inch piece of ginger

1 tablespoon of tomato puree

Half a teaspoon of pimiento seeds (whole if just adults or ground if feeding young children)

1 bay leaf

Few sprigs of fresh thyme

Quarter teaspoon of ground turmeric

1 tablespoon of coconut oil

Quarter a teaspoon of salt

For the kelewele:

1 plantain

piece of root ginger

Oil

You will need this equipment:

Preferably a blender, hand blender, food processor or nutri-bullet (you can do without if you don’t have!)

Chopping board and knife

Saucepan

Wooden spoon
